Chef Gerald Basilio, is an Executive Member of The World Association of Master Chefs and current Vice President of the Philippine Chapter. He is also Chef Patron of Stella Restaurant, Skye Cafe, and Basilico Ristorante and Catering Services Tarlac
What started you off in your career path as a chef?
-Honestly, I never imagined becoming a chef. My family lived and worked in Italy that is why I had the opportunity and need to follow them and to find a work.
My first job there was as a Domestic Helper. It wasn't an easy work that is why I went and looked for better opportunities. That's how I ended up studying Culinary Arts in Milan ( Professional Cook and Professional Chef Course). While I was working and studying there, I realized I was lucky because Italy is one of the best country to study Culinary.
Did you consider other options before deciding on culinary arts?
-Yes. I want to become an Entrepreneur a successful Restauranteur, that is why i took up an Entrepreneurship Course.
Who is your greatest influence as a chef?
-My greatest influence as a Chef is Chef Massimo Bottura. I really admire his work. He inspires me.
What would you consider as your greatest accomplishment this far?
- My greatest accomplishment so far is now being a Restauranteur and a Consultant Chef for various businesses
If there was one recipe to remember you by, which one would it be and why?
-Calderetang Kambing! Because this is my favorite recipe of my Mom which I learned the way she cook. She is my greatest inspiration. Everytime I cook because she is the best chef for me. I love you, Mom!
What was the most challenging project you handled?
-Four Catering Events in just one day plus hundreds of walk in clients. And we nailed it! Thank you to my team! You're all the best!
What other things are in your bucket list?
- To study Culinary again, but this time in France.
If given a blank check to finance any dream project, what would you work on?
- To own a Restaurant Farm Resort and an International Culinary School.
